Protein Crepes (starring Chobani!)

I was so excited when my doorbell rang last week with this little package. 


This seriously made my day (Thanks Chobani!)...  I eat greek yogurt for breakfast almost every morning, so I've been putting a hurting on that box.  It's almost gone!  

But in my pre-coffee stupor this morning, I decided that I wasn't feeling like the same old yogurt bowl.  I wanted pancakes.  Alas, there's a problem: pancakes = a ton of carbs first thing in the morning.  That's normally not a big deal, but Donald and I are involved in a little diet-related challenge at the moment.  So I dreamed up this little idea-- protein crepes! The recipe is pretty easy, and it involves stuff I usually keep on hand.  

Protein Crepes 
(makes one serving) 

Ingredients
Crepes:
2 eggs 
1 tsp of vanilla extract 
1 packet of artifical sweetener (I prefer Stevia, but I only had Splenda on hand.) 
2 tbsp of ricotta cheese 
1/2 tsp of cocoa powder 



Filling: 1/4 cup of flavored greek yogurt (I used Chobani 0% Apple Cinnamon.) 


In a bowl, beat two eggs for about a minute.  Add the remaining ingredients and beat well until blended.  Meanwhile, coat a skillet with cooking spray, and put it on medium high heat.  Pour mixture into hot skillet, and do not touch until it is almost cooked all the way through. Then, carefully flip the crepe, and cook for just a moment more.  Put the greek yogurt in the middle of the crepe in a line, and then fold the crepe around it.  Sprinkle with a tad more cinnamon, and serve. 


I'm off to yoga class!  I'm taking the yin-vinyasa class at Blue Turtle Yoga this morning. It's a great class, but it's more mentally exerting than physically challenging for me.  The class is structured to where you hold poses passively during the first portion of the class, then during the second portion, you practice using a slow intentional flow.  I have a hard time not making lists and plans during the first part of class!  Do you ever find your mind wandering when you are supposed to be focusing on something else?  I'm sure that I am not the only one. 

Plans for the day include: take the little one out on a picnic to enjoy this beautiful day, watch the Chelsea - Benfica soccer game, and off to bible study.
